NV Thorn-Clarke Sparkling Pinot Chardonnay

Aromas of green apple, lemon cream and floral notes, faint hints of strawberries, brioche, fresh baked bread and salted cashew nut.
Fresh, vibrant palate, with a creamy mousse and fine bead. The fresh green apple and citrus notes, along with the toasty brioche follows through on the palate. Vibrancy, balance and elegance being the key to this wine, with a refreshing acid line and the fruit to match it.
Vinification Notes
Both the Pinot Noir and Chardonnay grapes were picked at night. The grapes were then crushed and de-stemmed immediately to ensure minimum skin contact and phenolic extraction. The Pinot Noir and Chardonnay were fermented separately under cool conditions to ensure delicacy of the base wine, these base wines were then blended to obtain desired characters for the finished wine. The base wine was re-fermented and left on lees for six months to maximise mouthfeel and complexity.

A really fruit-forward nose with peaches and lemons, as well as pears. The palate has a fresh, sorbet-like texture with lemons and peaches and some grilled nuts to close. A neat, all-round sparkling.

Lovely candied nutty-like development lifts off the nose and has some powerful flavours on the creamy cashew palate with a lovely light spritzing to the finish.
