NV Thorn-Clarke Sparkling Pinot Chardonnay
The nose of this wine is filled with delicate aromas of green apple, citrus peel and a hint of strawberries and cream. The lees contact has enhanced the wine with richer characters of baked brioche and toasted hazelnuts.
The palate is bright and vibrant with elements of granny smith apple and grapefruit as well as slightly richer notes of almond meal. The mousse has a beautifully creamy mouthfeel and the bead is fine. A balanced wine with Eden Valley elegance.
Sourced from two of our cool climate sites in Eden Valley; Milton Park to the north and Mt Crawford to the south. The Pinot Noir and Chardonnay were harvested during the cool of night to ensure optimum fruit quality.
The grapes were destemmed and pressed off separately before commencing primary fermentation at cool temperatures to retain the fruit purity. Once primary fermentation was complete, the two wines were then blended and left to mature on lees for a period of 6 months to build mouthfeel and complexity. The base wine then completed secondary fermentation prior to bottling.

A really fruit-forward nose with peaches and lemons, as well as pears. The palate has a fresh, sorbet-like texture with lemons and peaches and some grilled nuts to close. A neat, all-round sparkling.

Lovely candied nutty-like development lifts off the nose and has some powerful flavours on the creamy cashew palate with a lovely light spritzing to the finish.
