2016 Terra Barossa Cabernet Sauvignon
Bright red with a purple hue on release. Lifted blackcurrant balances the fresh herb characters on the nose. A hint of eucalyptus is evident. The palate has bright currant characters throughout. Spice and chocolate add to the complexity of the wine. The tannins are ripe and grainy and give the wine good structure.
Harvest was carried out at night. Once destemmed the fruit was pumped over 2 or 3 times daily depending on colour, tannin and flavour extraction. The must was pressed after 6-8 days, malolactic fermentation was carried out in tank prior to French oak maturation for 10 to 12 months depending on the parcel. Post blending minimal fining and filtration were used.
A warm dry spring led to into similarly dry conditions in December and January. The warm weather brought harvest on in the first week of February. A couple of good rain events led to milder conditions and a long even ripening period and excellent flavour development. The wine from 2016 show typical Barossa warmth and generosity and should age well.

Mint, chocolate and cassis play easily on the nose of the 2016 Terra Barossa Cabernet Sauvignon. A blend of several vineyards, including a bit from Eden Valley, it's medium to full-bodied yet shows the variety's hallmark restraint and fine tannins on the finish.

The Thorn-Clarke wines from the Barossa are in a very good groove right now. This is an impressively bold red, typical of the Barossa, but also with terrific balance between black fruit Cabernet notes, dark plum flavours, savoury oak and soft, appealing tannins. Hints of pepper poke through the fruit and there is plenty of length. A very good choice to accompany gourmet sausages or a backyard barbecue
