Vinification Notes

Picked during the cool of night. An intentional minimalistic approach to winemaking to ensure the vineyard character sings. Free run juice, fermented cool, minimal fining and filtration.

18.5 / 20 - Bright, very pale straw-green colour, near colourless on the rim. This has a very subtle and delicate nose of mouthwatering wet-stone mineral aromas along with pure white florals and subtle apple-like suggestions. This has finesse, clarity and intricate and subtle detail. Dryish to taste and light bodied, the flavours of limes, apples, white florals and mouthwatering minerals show with great delicacy and detail. The wine is very refined and elegant and flows with poise and tension, following a fine textural thread and line. Light, lively and lacy acidity adds to the energy and drive, and carries the wine to a tight, finely textured, dry finish. This is a very delicate, subtle, refined dryish Riesling with floral, apple and minerally detail. Serve as an aperitif over the next 3-4 years. Fruit from ‘Mount Crawford’ cool-fermented to 11.0% alc.
