2011 Terra Barossa Cabernet Sauvignon

The 2011 Terra Barossa Cabernet Sauvignon has aromas of green bean, dried herbs, and dusty cedar like oak. The palate has a lively blackcurrant character on the front palate. This fruity character is balanced by spicy, chocolatey oak. The wine has varietal grainy tannins which are persistent well after the wine has left the mouth.

Vinification Notes

The fruit was harvested at night when the fruit was deemed to be ripe by our winemakers. Warm fermentation was carried out in a mix of potter and open fermenters. Extended time on skins adds to the texture of the wine. The wine was matured in French oak for ten months prior to blending and bottling.

Maturation

Matured in French oak for ten months.

Vintage Notes

This vintage had a cool, slow ripening period which has in turn produced elegant red wines.
