2004 Sandpiper Riesling
A typical Eden Valley Riesling on the nose, with intense floral characters and mineral notes. The palate is fine and elegant with lovely lemon and lime flavours balanced by crisp acidity. These citrus flavours stay in the mouth to produce a wine with good flavour and length.
Crushed and de-stemmed then gently pressed to minimise tannin extraction. The juice was settled for 3 days then racked and yeast added. Cool fermentation with temperatures maintained between 12°C-14°C, to ensure maximum fruit expression. The wine was then filtered and bottled to retain all the freshness and vitality.
The vintage was cool and mild overall, the only hot period being a 10 day stretch in late February. As a result fruit ripened later than usual and was given the opportunity to develop excellent flavour, whilst still retaining the acidity that is required for great Riesling.
