Before you start
Make sure you have clean hands and have cleaned and sanitised your measuring jug, your empty bottle and your glass. If you would prefer to blend a small amount so that you can try different variations, you blend directly into the wine glass. Otherwise, you can blend into the bottle provided.

How should I approach my blend?
It’s completely up to you! Think about the flavours, aromas and mouthfeel you’d like to achieve in your finished product. Taste each varietal individually and then decide how much of each you’d like to use. You can use as much or as little of each varietal as you’d like.
Thorn-Clarke’s Chief Winemaker, Peter Kelly, suggests starting with Cabernet Sauvignon as this varietal has a firm structure that provides a good base for the blend.
What does each varietal bring to the blend?
Cabernet Sauvignon – rich and dense with firm tannin structure and body, blackcurrant and leafy aromas, vibrant palate
Cabernet Franc – generous mid-weighted variety with plush mouthfeel and smooth tannins, blackcurrant aromas but with nice spice also
Merlot – generous mid-palate weight, soft mouthfeel and tannins, aromas of plum, black cherries and ripe mulberry
Malbec – richly fruited palate with fleshy tannins, plush blueberry and layers of perfumed stone fruits
Petit Verdot – a highly coloured variety that adds spice and perfume to the blend
What should a Quartage look, taste and smell like?
A Shotfire Quartage blend should display a balance of structure, fruit and complexity. The style has lifted fruit aromas, a combination of structure and richness on the palate and a long, smooth finish. Although we have 5 varieties to choose from, each vintage we only use the 4 that best capture that philosophy and style. The tasting note from a 2017 Quartage is below and can be used as a guide to some other flavours and aromas that the blend would typically have.
The 2017 Shotfire Quartage boasts a deep inky red – purple colour. Aromas of freshly crushed peppercorns, roasted capsicum & blackcurrant fill the glass. On the palate there is a generosity of fruit. The notes of dark cacoa and smokey bacon intertwined with velvety tannins lead to a complex finish.
